What the Chimney Park Bistro lacks in size, it makes up for in taste. Located in the tiny town of Windsor in northern Colorado, it stars such upscale dishes as bison carpaccio, Colorado lamb and an array of tempting vegetarian dishes. Don't be surprised if the chef stops by your table to say hi. It's that kind of place. 970-686-1477.

It's a coffee shop. A road house. An art gallery. Bongo Billy's Café in Salida is all that and more, specializing in coffee drinks and homemade soups, among other things. Rumor has it, locals love the Southwestern-style Reuben sandwich. All can be enjoyed on the back deck in summer. 719-395-2634.
